Vegan Potato Skins

Tese vegan potato skins are a tasty, filling, comfort food. By topping them with the maple bacon tempeh, it adds some flavor and protein.


  • 1 bag of russet potatoes
  • 1/2 package Smoky Maple Bacon Tempeh
  • A couple of tbsp olive oil
  • 1/2 bag Daiya cheddar cheese
  • 1 bunch of green onions, chopped
  • Vegan sour cream
  • Salt and Pepper to taste


Preheat oven to 400 degrees.


Wash however many potatoes you will need, prick them with a fork a few times, and place them into the preheated oven directly on the rack. Bake until they are cooked, usually about 45 minutes or so.

While the potatoes are baking, heat one or two tbsp olive oil in a large flat pan over medium heat and lay in the maple bacon tempeh in a single layer. Cook the tempeh in the oil for about 5 minutes, or until the bottom is becoming browned, and then flip and cook on the other side for about 5 minutes. Remove the tempeh from the heat and set aside to cool.

When the potatoes are done baking, remove from the oven and let them cool for a little while until you can handle them. Once cool, slice in half and scoop out the insides while leaving about 1/3 of an inch of potato left along the skin. (I saved my potato insides in a container and ate them later like mashed potatoes)

Lay the potato skins on a baking sheet,  brush them with olive oil and sprinkle on some salt and pepper.

Crumble the bacon tempeh into the potato skins, top with some vegan cheese, and pop them back into the 400 degree oven for 5-10 minutes, or until the cheese gets as melted as it will get.

Remove the potato skins and serve with a sprinkling of green onions and a dollop of sour cream!
