Peruvian Chilcano Recipe

  • 1/2 kg of fish (bonito)
  • Salt and pepper to taste
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 1 sprig of parsley
  • 8 cups water or broth of fish heads
  • 1 red pepper ground
  • Lemon juice and pepper to taste
  • Chinese onion chopped
  • 1 piece of celery
  • Serrana toast court


To prepare this delicious Peruvian dish, we start by putting the fish in a pot with salt, pepper, garlic, lemon juice, onion and parsley. Add the red pepper.

Then pour the water or fish broth and simmer until fish is cooked.

Note:

For the fish broth, put to cook the head and spine fish in salt water, along with celery, for about half an hour. Strain the broth.

Finally serve and flavor with pepper and lemon juice to taste, garnish with these elements.
