  • 200 gr. Of flour.
  • 200 gr. of sugar.
  • 200 gr. Of currants.
  • 50 gr. Of butter or margarine.
  • 1 natural yogurt.
  • 3 eggs.
  • 1 small spoon of yeast
  • powdered.
  • 1 lemon.
  • 2 large spoons of rum.
  • A pinch of salt.
  • Powdered sugar.


You have to separate the egg white from the egg yolks, leave the egg whites in a medium-sized bowl, make it very clean and very dry and the yolks in a small bowl. Put the raisins in a cup and cover them with water, about 15 minutes.

Slice the skin of the lemon, and squeeze the juice and leave it reserved.

Put the butter or margarine to heat in the microwave for 1 minute.

Prepare a large bowl and put butter and sugar inside, stirring until smooth

Add butter and sugar, lemon zest, lemon juice, egg yolks, yogurt, and whisk it well, about three minutes.

Prepare a large bowl and place the flour and small spoon of yeast and salt inside.

Gradually add the mixture that you beat to the flour, do not stop moving it until everything is well connected.

Remove the raisins from the water and wipe them with a dishcloth, then spoon them with flour.

Put the raisins and the two spoons of rum into the mixture.

Beat the egg whites in the same large bowl that we have reserved, you have to beat them with enough energy until they are close to snow.

Finally for the egg whites to snow point inside the previous mixture and remove everything well.

Prepare a baking dish with a shallow depth and about 20 centimeters in diameter, floured it so that it does not get caught.

Put it in the oven very soft about 15 minutes.

When you pass the 15 minutes check how it goes, you may not need more time but if you see that it is still tender let it five minutes more, you can check by putting a round point knife in the center of the cake and you see that it comes out dry and you have it ready , If on the other hand you see that the knife comes out wet it is still a few minutes away.

When you have it ready, let it cool, when it loses temperature take out of the mold and put in a plate.

Cover the entire top of the cake with icing sugar and decorate it with damp raisins on top.

It can be accompanied with a good coffee, or for children with a chocolate, but if you prefer you can eat alone.

Snow spot: It is achieved by simply beating the whites of the eggs.

Beat with energy and you'll see how the whites become white and increase in size.

For this you have to do it in a large and very dry container.
