Vegan Pizza Cupcakes |
I came up
with this vegan pizza cupcake recipe as a way to quickly make bite-size pizzas
as part of a snacky dinner for Chris on his birthday this year, and now he asks
me to make them all the time. I went the simple route with these and just did
the pizza sauce and cheese combo since I was making other things too, but these
would be really good with some veggies, mushrooms, or fake meats in there too.
I think I will try a bit of chopped onion and green peppers or olives mixed
into the sauce the next time I make them. These would even work well for some
sort of Mexican style pizza bites with refried beans and a salsa and guacamole
topping.

Preheat the oven to 375 degrees and grease a cupcake pan.
Unroll the pizza dough and cut it up into little squares. I was able to get 9 squares out of mine, but if you like less dough you can probably cut the squares smaller and just pull them a little bit to fit into the pan.
Push your pizza dough squares into the greased cupcake cups and shape them up the sides a little bit if they seem to be falling into the bottom too much.
Spoon some pizza sauce into the pizza dough cups and then top with a sprinkle of Daiya cheese and a few dashes of garlic powder. Feel free to add any other pizza toppings at this step as well.
Bake the vegan pizza cupcakes for about 15 minutes at 375 degrees or until the cheese is melted and the crust has risen and started turning golden-brown. Let them cool for a few minutes before serving.
