Cheesy Chicken Marsala

Cheesy Chicken Marsala Recipe
Cheesy Chicken Marsala

  • ¼ tsp chopped basil
  • ¼ tsp chopped rosemary
  • ¼ tsp coarsely ground black pepper
  • A pinch of salt
  • 3 tbsp sifted flour
  • 4 chicken breast fillets
  • 3 tbsp olive oil (preferably extra virgin)
  • 1 large onion, finely chopped
  • 2 cups of sliced mushrooms
  • 1 crushed garlic clove
  • 3 tbsp lemon juice
  • 1 tsp lemon zest
  • ¾ cup Marsala wine
  • 2 tbsp chopped fresh parsley
  • 1 cup crumbled Romano cheese
  • 4 toasted sliced of garlic bread



In a bowl, mix the flour with the herbs, salt and black pepper to create the coating for your chicken. Cover the chicken breasts in the seasoned flour mix.

Heat the olive oil in a non-stick pan on a medium heat. Add in the garlic, mushrooms and onion and ccok until soft. Transfer them into a bowl and put them to one side until later.

Put the rest of the olive oil into the pan and heat (but not until it begins to smoke). Drop the coated chicken into the pan, and cook both sides until it is golden brown. Allow to cook through for twenty minutes before checking the middle of the fillet is cooked.

Pour the lemon juice and Marsala wine into the pan with the chicken and add the lemon zest. Take the onion mixture you prepared earlier and mix this in, along with the chopped parsley. Heat gently together for 2 further minutes.

Sprinkle the grated Romano cheese onto the cooked chicken, and lower the heat. Cover everything and heat gently for three minutes until the cheese has nicely melted.

Serve the chicken breasts on slices of toasted garlic bread. Scoop generous amounts of the sauce, onion and mushrooms onto the bread with them.

Tip:

Different cheeses such as mozzarella and provolone can be used for a slightly different flavor and texture.

This dish is great served with a fresh salad of green leaves served with a light vinaigrette.
