Mexican Oven Fried Chicken |
- 2 and ¼ pounds of chicken portions
- 1 tbsp butter
- 1 cup of buttermilk based baking mix
- 1 tbsp of cornmeal
- 1 tbsp of chili powder
- 1 and ½ tbsps of paprika
Preheat the oven to 425 degrees (F).
Put the butter in a pan and put in the preheated oven to melt.
Add the bake mix, cornmeal, chili powder, paprika and a pinch of salt and pepper to a bowl and mix.
Toss the chicken in the mixture to evenly coat.
Put the chicken in the hot pan, skin side down and cook for 35-40 minutes without covering.
Turn the pieces over and bake for 15 more minutes.
Serve hot or cold with your favorite dip and side dishes!
