Galician Empanada



Ingredients for the crust
  • 500 grams of flour12 tablespoons of used oil.

  • 1 teaspoon of salt
  • 1 teaspoon of sweet paprika 

Ingredients for the filling
  • 200 ml of olive oil
  • 1 medium onion
  • 1 eggplant
  • 2 green peppers
  • 6 tablespoons of tomato sauce
  • 200 grams of tuna 


Peel and finely chop the onion, aubergine and peppers.
In a skillet warm the oil when heated all the ingredients chopped peeled.

Let simmer for about 20 minutes, after that time remove from the heat and with a separate spoonful of 12 to 14 full spoons that we will use for dough.

Add the tomato sauce and the tuna mixture well and let cool.

Separate 12 to 14 tablespoons of oil from the mixture, strain and reserve.

Add the tablespoon paprika oil. Mix well.

Put all the ingredients in a large bowl and mix. Lightly oil a roller with clean oil.

Prepare a soft custard surface and lightly rub with oil so the dough will not stick. Begin to knead the dough until it has a fine elastic mass. When you see that it no longer sticks to the surface is ready.

Start a game until you get a thin and elastic dough, when you see that it does not stick to the hands or the counter and you have it ready.

Cut the dough into two balls. With a dough extension roller until you have a round large enough for your tin cake. It does not need to be too thin, as seen in the photo.

Prepare the oven at a temperature of 400 ° F and place the dish in the center of the oven.
