We place the wheat in a mixing bowl and water and leave one side, to leave the wheat, let soak for 10-15 minutes.
Place the following ingredients the pine kernels or almonds in a dry pan and toast them with a moderate heat stirring until they are slightly golden and fragrant.
Put a heat the oven to 1800C / Gas mark 4.
Put the turkey into cubes in a food processor along with nuts, coriander, onion, orange zest and cinnamon. Add the salt and pepper to taste, process until a dough is formed.
Drain the bulgur wheat by pressing for any amount of water possible and add to the food processor. Whiz again to combine.
Lightly grease a can of bread and press the turkey mixture on it. Rub the top portion lightly with oil and cook in the oven for 1 hour and 15 minutes until done. Remove the saucepan from the oven and rest in a warm place for 15 minutes before removing from the can and carving into slices.
